Scrumptious truffles that are good for you!

I have to admit that chocolate is my downfall. I love it!  I was looking for a recipe that included beans with chocolate so I turned to Pinterest. I found two great recipes using black beans to make healthy truffles.  Healthy truffles… isn’t that an oxymoron? Okay, I know what you are thinking…that this can’t possibly taste good. Usually when someone says “It’s healthy and low calorie” you think sure…it will taste like cardboard and I’ll have to drink a lot of milk to wash it down. This is not the ca se with these treats. I made a batch and took them to relatives and friends and everyone could not believe how good they were!

 Don’t be scared about dipping chocolates with these recipes. In the past I have tried to make pretty dipped chocolates and have had the problem with the chocolate being too warm and the filing melting into the chocolate or completely falling to pieces and having to fish the pieces out of the chocolate. I would tell my family that they might not be pretty, but they taste good! Thanks to this website and the how to videos on it, I was able to not only make delicious, pretty chocolates it was easier than I ever imagined!

 CANDIQUIK is available at Safeway, Walmart and some Target stores. You can substitute Candy Melts by Wilton and those are available anywhere Wilton products are sold such as Michael’s, Hobby Lobby and JoAnn stores. Both are also available at Amazon.com.

 Both these recipes call for coconut oil.  If you have never used it you are in for a surprise.  It isn’t a liquid oil like canola or olive, it comes in a solid form (unless you live in a tropical or warm climate then it liquifies).  Not only can you use it in making truffles, you can bake with it and put it in smoothies.  It is also a wonderful moisturizer.  Kitchen use and beauty use…what could be better?

Chocolate Black Bean Truffles

 Makes approximately 16

Ingredients

1 1/2 cups cooked and drained black beans

1 1/2 tablespoons coconut oil

1/4 teaspoon vanilla extract

2 1/2 tablespoons honey

2 tablespoons chocolate pudding powder ( I used Jello cook and serve chocolate pudding)

5 1/2 tablespoons unsweetened dark cocoa powder

1 (16oz) package Chocolate CANDIQUIK Coating

Instructions

 Place beans, coconut oil, vanilla and honey in a food processor and blend until smooth.

Pureebeans

Add chocolate pudding powder and blend again until combined.

Addcocoa

 Add cocoa powder to food processor and blend until combined.

 Scrape the mixture into a bowl, cover with plastic wrap and refrigerate until firm, about 30 minutes.

 Roll into 1” balls and place on a baking sheet lined with parchment paper.

Rolled balls

 Place the balls back into the refrigerator for another 30 minutes.

 Melt the CANDIQUIK according to package directions. Transfer into a deep cup or mug for easy dipping.

 Using a toothpick, dip each ball into chocolate coating and place on parchment paper to set.

Decadent Chocolate Black Bean Truffles

Vegan and Gluten Free!

Makes approximately 18 truffles

 From Jennifer’s Recipe Book

 Ingredients 

1 cup cooked and drained black beans

2 tablespoons coconut oil

3 tablespoons dark cocoa powder

3 tablespoons pure maple syrup (not Mrs. Butterworth or Log Cabin)

1/2 vanilla pod, seeds scraped from within (put pod that has been scraped in your sugar bowl for vanilla flavored sugar)

1/2 teaspoon Grand Marnier liqour

1 cup semi sweet chocolate chips

chocolate sprinkles (optional)

 

Truffles1

 Place the beans, coconut oil, cocoa powder, maple syrup, Grand Marnier and vanilla seeds in food processor.  Blend everything until well combined and smooth.  Scrape the mixture into a bowl, cover with plastic wrap and refrigerate for 1 hour.

 Roll chocolate mixture into 1” balls and place on parchment paper lined baking sheet.  At this point if you prefer you can roll them in cocoa powder instead of dipping them in chocolate.

 If dipping them melt the chocolate chips in a double boiler. Cool slightly. When the balls have chilled take out just a handful and carefully insert a toothpick into the center and dip in the melted chocolate to coat.  Place on a sheet of parchment to harden.  If you like top them with a few chocolate sprinkles. Let chill again so the coating sets.

Store in the refrigerator.
