Nancylynn Sicilia Lapp has always been a teacher — but now, instead of teaching middle school students as she did earlier in her career, she’s teaching the world! Nancylynn’s website, Confessions of a Fit Foodie, shows readers how to create clean, gluten-free comfort food.

Sharing her love of food has been a passion throughout her entire life. “It has kind of been a dream of mine since I was a little girl, as I have always loved food and cooking,” she says. “In 2015, I found myself making healthier versions of our favorite recipes and sharing them with friends and family. From there, it’s been a lot of hard work and tons of fun to see Confessions grow to what it has become today!”

As a busy working mom of two kids, Nancylynn also understands the challenges of juggling schedules while trying to eat healthy (something most of us can relate to). “I think it’s important to make good nutrition feel accessible and attainable to my readers,” she says. “So my recipes are healthy, but also simple and appeal to even the pickiest eater!”

She sticks to her commitment to healthy eating by stocking nutritious staples on hand — including beans, of course! “Chickpeas and black beans are staples in my recipes because they are both very versatile and fit so many different flavor profiles,” she says. “Beans are a budget-friendly way to get healthy protein and fiber into your meals. They work in so many different types of recipes — even dessert!”
