As a college student majoring in public relations, Emilie went vegan and immediately began tinkering in the kitchen, creating plant-based versions of her favorite foods. Excited to share her creations with the world, she grabbed her camera and started her blog, emilie eats. Emilie’s recipes are made with budget-friendly foods because she believes healthy eating should be accessible to everyone – including cash-strapped college students, like she once was. This kitchen crusader believes in her mission so much that she’s studying to be a registered dietician.

Emilie’s nutrition philosophy is accessible, as well. She encourages others to steer clear of extremes and instead feed, move, and appreciate their bodies for balanced health. “Eat lots of plants, but don’t stress a ton about what you eat. And understand that nutrition is just a small slice of health!” From spicy margaritas to chocolate crepe cake to sweet potato fries, Emilie has plenty of ways to treat yo’self.

As a vegan and healthful eater, Emilie naturally gravitates toward beans. “They’re an affordable source of plant-based protein and fiber,” she says. “You can often find me telling people ‘eat more beans’ when they ask for nutrition advice.” Take a peek in her pantry, and you’ll find it stocked with pintos. “Right now, I’m really loving pinto beans. I find that they are really creamy, plus they are affordable! I love adding them to burrito bowls and soups.”

Out of the hundreds of recipes that Emilie has posted, one of her all-time favorites is her Fluffy Chickpea Pancakes. “Because it’s so easy to make and is full of vegetables and plant protein, it’s a recipe I come back to time and again,” she enthuses on the blog. We can see why: These satisfying, gluten-free pancakes are drizzled with avocado sauce and are delicious any time of day.
