This time of year with school back in session sometimes it’s hard to get the kids going in the morning and even harder to have time to make a nutritious breakfast that will sustain those little tummies until lunch time. Having a burrito with beans, eggs and avocado is something that if you are running late, as most of us are, you and the kids can eat this on the run. If you use dried black beans soak and cook them up to a couple of days ahead of time to use in the burritos. You can also freeze them after you cook them in serving portion sizes and defrost them the night before you need them.

These little beans pack a nutritious punch and a 1 cup serving of black beans provide well over half of the daily value of fiber for an average adult and one third of the daily value of protein an adult will need for the day.

Ingredients

Breakfast Burrito
1 serving
1 flour tortilla
2-3 Tbsp black beans
1 egg,scrambled
1/4 avocado
salsa

scramble the egg

Put avocado and black beans on tortilla and smash them with a fork. Put on paper towel in microwave and zap for 1 minute.

Add scrambled egg on top of the avocado bean mix.  Put as much salsa as you want on top and wrap the tortilla up
