Tired of boring old chicken every week? Blogger Alexandra Caspero suggests you beat the poultry doldrums with a different sort of chick — chickpeas.

“Chickpeas are my favorite!” the blogger behind the whole-food vegetarian site Delish Knowledge says. “I eat them a few times a week; I love their creamy, versatile flavor, and they’re mild enough to work into most recipes. I like to think of them as my chicken; I will exchange them for chicken in my family’s recipes.”

Easy swaps like that are one of the best ways to introduce more plants into your diet. Alexandra should know — she’s an expert! She uses her background as a registered nurse to help parents navigate the world of plant-based prenatal and pediatric nutrition with her platform Plant-Based Juniors. If you’re wary of introducing more carbs into your diet, Alexandra suggests relaxing a bit. “We hear a lot about protein, but I think we should be focusing instead on fiber,” she says. “Most Americans get only a third of the recommended fiber intake per day, and dried beans are a great way to up the intake.”

Alexandra encourages her readers to steadily incorporate more plant-based foods into their diets, “regardless of what else is on their plate,” she says. “I’m a big believer in adding in more plant-based foods; it’s good for personal health and it’s also critically important for the health of our planet.”
