Recipe Ingredients:

  • 1 lb. Italian Sausage, sliced into 3/8”- ½ “ pieces

  • 1 medium onion, sliced

  • 1 can (16 oz) whole tomatoes with liquid, chopped

  • 1 1/2 cups cooked garbanzos

  • 1 can (14.5 oz) beef broth

  • 1 ½ cups water

  • 2 medium zucchini, cut into ¼” slices

  • ½ teaspoon dried basil

  • grated Parmesan cheese

Instructions

In a 3 quart saucepan, cook sausages and onion; drain fat. Stir in tomatoes, garbs, broth, water, zucchini and basil. Bring to boil. Reduce heat and simmer 5 minutes or until zucchini is tender. ( A longer simmer time is better.) Sprinkle each serving with Parmesan cheese.
