Recipe Ingredients:

  • 3 cups shredded cabbage

  • 1 tablespoon minced green onion

  • 2 cups cooked*, drained white baby or large limas or one 16-oz. can, drained

  • 1 red apple, unpeeled, cored and diced

  • 1 ounces reduced fat Cheddar cheese, cubed

Creamy Dressing:

  • 1 tablespoon lemon juice

  • 1/8 teaspoon garlic salt

  • Romaine leaves

Instructions

Combine cabbage, onion and garlic salt; add 1/4 cup Creamy Dressing and toss lightly. Sprinkle apple with lemon juice. Combine cabbage mixture, beans, apple and cheese in a salad bowl and mix well with a little more dressing, if needed to coat all ingredients. Edge the bowl with Romaine spears and offer to guests for self-service. Serves 4-6.

CREAMY DRESSING:

Combine 1 cup sour cream, 1/4 cup mayonnaise, 2 tablespoons vinegar, 1 teaspoon sugar and 1/4 teaspoon Worcestershire sauce. Mix well. Optional: 1/4 teaspoon celery seed.
