Recipe Ingredients:

  • 3 tablespoons olive oil

  • 3 tablespoons lemon juice

  • Grated rind of 1 lemon, about 2 teaspoons

  • 1 clove garlic, minced or pressed

  • 3/4 teaspoon salt

  • 1/4 teaspoon pepper

  • 5 cups cooked* baby lima beans, drained, not cooled

    *1-3/4 cups dry makes 5 cups cooked.

  • 1 cup chopped tomatoes (2 medium)

  • 1/3 cup diced red onion

  • 1/4 cup chopped fresh basil

Instructions

In a large bowl, combine olive oil, lemon juice, lemon rind, garlic, salt and pepper. Add hot, drained beans; cool 10-15 minutes, stirring frequently. Add tomatoes, onion and basil. Marinate 1-2 hours at room temperature before serving. Makes: 6 cups. Serves 4-6.
