Recipe Ingredients:
1 cup white beans
1 tomato
1/8 cup fresh minced parsley or basil
1 clove of garlic
1 Tbsp. of olive oil
1 Tbsp. of white balsamic vinegar
Instructions
Cut baguette into 1/4-1/2 inch slices. Place on baking sheet, brush with a little olive oil and broil until just toasted. After toasted rub with a garlic clove.
Mix together 1 cup of cooked, lightly crushed white beans with 1 tomato finely chopped. Add 1/8 cup of fresh minced parsley or basil or a combination of both. Crush 1 clove of garlic and mix with 1 Tbsp. olive oil and 1Tbsp. white balsamic vinegar or white wine vinegar. Add this to bean mixture.
Mound on baguette slices and drizzle with olive oil. Garnish with parsley or basil.
