The cabin kids circa 1980’s

Since the late 1970’s my husband and I along with 4 other couples have been going to a cabin in the Sierra’s. Built in the late 1930’s the cabin is rustic, simple and much loved by all who have enjoyed spending time there during the years. The “cabin crew” as we call ourselves has now grown to around 36. Our children have married and we have been lucky that all the spouses have blended into this close knit group. With the addition of grandchildren there are now little ones running around. We have been blessed that this group of friends has remained close all these years. The kids have spread out to several states, but when they get together it’s like they have never been apart. We recently got together to celebrate with a bridal shower the upcoming wedding for one of the kids and her fiance. I needed an appetizer to take to the party and of course I wanted it to include beans! Pinterest is my go to for recipe ideas. I love it! I can just type anything in the search and find a great recipe. This was the case for the shower. I found this delicious bean dip with salami chips from the blog Desserts for Two. Salami chips? Yes indeed! I also had the brilliant idea of hollowing out a red cabbage to put the dip in. Not so brilliant. First I used a knife, that was taking too long then I found an old peach pitter that my mother had that she used to use when she canned peaches. That worked better. I didn’t want to put the dip directly in the cabbage because I felt it might take on the cabbage flavor so I used a glass dish and put that in the cabbage. I made the dip for a barbeque a month later and just wrapped a glass dish with cabbage leaves and tied string around it. Worked much better and believe me it didn’t take as long!

Roasted Garlic Bean Dip

Makes about 2 cups

 Ingredients

1 whole head of garlic

1 tsp olive oil

1 3/4 cups cooked Great Northern white beans

1/4 tsp salt

1/4 tsp black pepper

3 tbsp olive oil

1 tbsp fresh lemon juice

2-3 tbsp warm water

 Salami Chips

4 oz. very thinly sliced salami

 Instructions

First, preheat the oven to 375 degrees. Slice the top off the head of the garlic and place in a small baking dish. Pour the olive oil on top and let it soak in while the oven preheats. Roast the garlic for 45 minutes. Remove from the oven, but keep the oven on.

Meanwhile, make the bean dip: squeeze the cloves from the garlic bulb or remove with a knife.

Put in the bowl of a food processor.

Add all the remaining ingredients. Pulse until smooth.

Use extra warm water to thin it out, if desired. To make the salami chips, lay out the slices of salami on a large baking sheet. It’s fine if they slightly overlap because they will shrink as they cook. Bake for 9-12 minutes, until the edges start to slightly brown and curl. Watch closely as they have a tendency to burn! They will crisp as they cool. Lay them on a paper towel to soak up the oil. The salami chips stay crispy for up to 2 days. Figure7
