Seven years ago, My Nguyen had a revelation. Like many aha moments, it happened at 4 a.m. A mom of twin toddlers, My often posted pictures of the healthy foods she prepared for her family. On this restless night, she couldn’t stop thinking about all the attention those posts were getting from people asking for more recipes and help with healthy eating. Suddenly, her mission became clear: Show the world that healthy eating can be easy and tasty. “I grabbed my phone and started cleaning out my feed, mainly keeping photos of the food I made,” My recalls. “The outcome was truly humbling; I went from 500 followers that night to 30,000 in just four months. Two years after that fateful night, we made it to over 1 million healthy followers.”
Today, My’s family-friendly dishes with a healthy twist are getting even more attention through her My Healthy Dish website and cookbook. “Part of being healthy is influencing those around you to strive toward health, so it’s very important for me to help others by sharing what I know.”
A versatile cook, My creates everything from Paleo to vegan dishes – many of which feature dry beans. “To me, healthy eating is going to back to basics: cooking more and eating less processed foods,” My says. “It’s important that people know how to cook from scratch. Incorporating dry beans into your diet helps with cooking skills and your understanding of food. Dry beans also provide so many nutrients, and they’re a plant-based protein source.”
There is one bean that My can’t help gushing over. “I love all kinds of beans, but my favorite would have to be garbanzo beans or chickpeas because they are so versatile,” she says. “They are a great source of protein for vegans and vegetarians, and they can be a flour substitute for those who follow a gluten-free diet. The aquafaba from garbanzos is also an amazing alternative for eggs in baking. And let’s not forget about hummus! There are so many options with garbanzos: the flavors can go anywhere from savory to sweet, and the textures can range from crisp to smooth. Cooking with garbanzos is fun!”
