Ingredients:
2 cups dry pasta rotini or other small pasta
2 cups cooked baby lima beans
2 celery stalks, chopped
1 1/2 cups cooked or 1 can (15 oz.) blackeyes, drained
1/2 red bell pepper, chopped
1/4 cup chopped fresh parsley
Dressing Ingredients:
1/4 cup extra virgin olive oil
3 Tbsp. red wine vinegar
1 clove garlic, minced
salt and pepper to taste
Instructions
Cook the pasta according to directions on package. Drain well. Add the baby lima beans tuna, celery, bell pepper and parsley. Drizzle dressing over all. Chill in refrigerator.
