panzanella salad

Recipe Ingredients:

  • 1/2 cup extra virgin olive oil

  • 3 Tbsp red wine vinegar

  • 3 cloves garlic, minced

  • 1 cup fresh green beans

  • 2 cups cherry or grape tomatoes

  • 1 1/2 cups green bell pepper

  • 1 1/2 cups red bell pepper

  • 2 cups cooked baby limas

  • 1/4 cup fresh basil, chopped

  • 1/4 cup fresh parsley, chopped

  • 1/2 a red onion, sliced

  • 1 can (6 oz) pitted black olives

  • Bread croutons

    Cooking Steps

    Combine the olive oil, red wine vinegar and garlic in a bowl. In a separate bowl mix the green beans, tomatoes, red and green bell pepper, baby limas, basil, parsley, onion and olives. Put the olive oil mixture on top of the vegetables and croutons and toss.

    Croutons

    Cut up french or Italian bread into large cubes. Arrange on baking sheet, sprinkle with a little granulated garlic and toss with a little olive oil. Bake at 350 degrees turning once until slightly toasted.
