meridas taco salad with beans

Recipe Ingredients:

  • 1 pound ground turkey breast or sirloin

  • 1 large head (or green leaf) lettuce, shredded

  • 1/2 pound reduced-fat cheddar cheese, grated

  • 2 cups cooked*, drained red kidney beans or one 16-oz. can, drained

  • 2 cups cooked*, drained garbanzo beans or one 16-oz. can, drained

  • 3 to 6 cups tortilla chips

  • 6 tablespoons zesty reduced-calorie Italian salad dressing

Instructions

Brown ground beef and season to taste. Let simmer for about 15 minutes. Drain off excess fat. Combine beef and remaining ingredients in large bowl, toss and serve. Makes 6 servings.

Chef’s tip: For extra color and flavor, add coarsely chopped green bell peppers.

*For best results, soak and cook dry beans by preferred method.
