tropical bean butter smoothie

Makes 4-6 servings

Recipe Ingredients:

  • 1 small onion- diced

  • 1 small green bell pepper, rinsed, cored and coarsely diced; or red bell pepper to add sweetness

  • 1 clove garlic, thinly sliced

  • 1 lb chorizos sliced about ¼” thick

  • 4 1/2 cups cooked garbanzos

  • salt to taste

  • pepper to taste

  • 1 (14.5 oz) can Italian Recipe stewed tomatoes (get diced version if smaller tomato pieces preferred)

  • Buttered Bread Crumbs

Instructions

Brown chorizo in little to no oil in Dutch over or heavy skillet. Remove chorizo. Add garlic, pepper and onion to drippings from chorizo and cook until translucent. Add chorizo back into pan plus garbanzos, tomatoes, salt and pepper. Simmer until done.
