One of Stacie Vaughan’s earliest memories centers on her love of cooking. “I remember reading my mom’s cookbooks for fun as a child and bookmarking the recipes I wanted to make,” she recalls.
With a head start like that, it’s not surprising that her food blog, Simply Stacie, has taken off. “I love to cook (and eat) and have a passion for food photography,” Stacie says. “I wrote about other topics for years, but they just didn’t hold the same special place in my heart that food always did.”
Before blogging, this multi-talented foodie was an accountant, then a stay-at-home mom. In need of a creative outlet, she filled her site with delicious and easy recipes. Her creations have been featured on the websites of MSN, Buzzfeed, Huffpost, People, and many more.
Stacie is a recipe wiz who can post Brownie Bottom Cheesecake next to Keto Chicken Tips, and somehow it all works together beautifully. “I believe everything in moderation,” she explains. “I try to eat healthy most days, but do indulge every once in a while. I know that the better I eat, the more energy I have and the better I feel.”
For Stacie and her family, eating well includes dry beans. “Beans are good for you and can be used in so many different ways,” she says. “Adding a little fiber to your diet is easy when you use all the different varieties of yummy beans out there. I love white kidney beans! I use them often in soups and chili. They have the best creamy texture and are so, so good.”
Stacie incorporates her beloved white beans and two other varieties into her hearty Bean Casserole. With just 10 minutes prep time and 40 minutes in the oven, it’s sure to become a weeknight favorite for your family!
