Recipe Ingredients:
1 pound Italian link sausage
1/4 cup chopped onion
1 can (8-oz.) tomato sauce
2 tablespoons chopped parsley
1/4 teaspoon each basil, salt and crushed oregano
1/8 teaspoon pepper
3 cups cooked*, drained red kidney beans or two 16-oz. cans, drained
Instructions
Place link sausage in skillet with water to depth of 1/4-inch. Cook, uncovered, until water evaporates. Continue cooking on low heat about 20 minutes or until sausages are brown on all sides. Remove from skillet; drain excess fat. Sauté onion; add tomato sauce, parsley and seasonings. Add beans; mix well. Arrange sausages on top of beans. Simmer, covered, 10 minutes or until thoroughly heated. Makes 4 to 6 servings.
*For best results, soak and cook dry beans by preferred method.
