Vegan and Gluten Free!
Makes approximately 18 truffles
Recipe Ingredients:
1 cup cooked and drained black beans
2 tablespoons coconut oil
3 tablespoons dark cocoa powder
3 tablespoons pure maple syrup (not Mrs. Butterworth or Log Cabin)
1/2 vanilla pod, seeds scraped from within (put pod that has been scraped in your sugar bowl for vanilla flavored sugar)
1/2 teaspoon Grand Marnier liquor
1-cup semi sweet chocolate chips
Chocolate sprinkles (optional)
Instructions
Place the beans, coconut oil, cocoa powder, maple syrup, Grand Marnier and vanilla seeds in food processor. Blend everything until well combined and smooth. Scrape the mixture into a bowl, cover with plastic wrap and refrigerate for 1 hour.
Roll chocolate mixture into 1” balls and place on parchment paper lined baking sheet. At this point if you prefer you can roll them in cocoa powder instead of dipping them in chocolate.
If dipping them melt the chocolate chips in a double boiler. Cool slightly. When the balls have chilled take out just a handful and carefully insert a toothpick into the center and dip in the melted chocolate to coat. Place on a sheet of parchment to harden. If you like top them with a few chocolate sprinkles. Let chill again so the coating sets.
Store in the refrigerator.
