calico bean salad

Recipe Ingredients:

  • 2 cups cooked * drained small white beans or one 16-oz. can, drained

  • 2 cups cooked* drained dark or light red kidney beans or one 16-oz. can, drained

  • 2 cups cooked* drained garbanzo beans, or one 16-oz. can, drained

  • 1 1⁄2 -2 cups French, Italian or vinaigrette dressing (bottled or homemade)

  • Salt and coarse black pepper

  • Tomato wedges and onion rings

Instructions

Drain beans, mix together lightly, cover with dressing. Refrigerate for several hours. When ready to serve, mix again. Taste and add more seasonings or a little vinegar if needed. Serve in a large bowl and garnish with tomato wedges and onion rings. Makes 8 to 10 servings.

*For best results, soak and cook dry beans by preferred method.
