Recipe Ingredients:
2 cups cooked * drained small white beans or one 16-oz. can, drained
2 cups cooked* drained dark or light red kidney beans or one 16-oz. can, drained
2 cups cooked* drained garbanzo beans, or one 16-oz. can, drained
1 1⁄2 -2 cups French, Italian or vinaigrette dressing (bottled or homemade)
Salt and coarse black pepper
Tomato wedges and onion rings
Instructions
Drain beans, mix together lightly, cover with dressing. Refrigerate for several hours. When ready to serve, mix again. Taste and add more seasonings or a little vinegar if needed. Serve in a large bowl and garnish with tomato wedges and onion rings. Makes 8 to 10 servings.
*For best results, soak and cook dry beans by preferred method.
