Recipe Ingredients:

  • 3 cups cooked* or 2 cans (15 oz. each) blackeyes, drained

    *1 cup dry makes 3 cups cooked.

  • 1 can (15 oz.) corn, drained

  • 3/4 cup chopped tomato (1 medium)

  • 1/3 cup finely chopped red onion

  • 1/4 cup minced cilantro

  • Lime Chili Dressing (recipe follows)

  • 4 tablespoons lime juice

  • 3 tablespoons olive oil

  • 1 clove garlic, minced or pressed

  • 1 teaspoon chili powder

  • 1/2 teaspoon grated lime rind

  • 1/4 teaspoon each sugar, salt and pepper

Instructions

In a large bowl, combine blackeyes, corn, tomato, onion and cilantro. Gently stir in Lime Chili Dressing. Refrigerate until serving.

Lime Chili Dressing:

In a small bowl or shaker jar, combine all ingredients and mix well. Makes about 1/2 cup. Makes: 6 cups. Serves 6
