black bean fudge

Recipe Ingredients:

  • 1 2/3 cups cooked black beans

  • 1 cup cocoa powder

  • 2/3-cup butter, melted

  • 1-teaspoon vanilla

  • 8 cups powdered sugar

  • 3/4 cup granulated sugar

  • 2 cups chopped walnuts

Instructions

Puree beans in a food processor with the melted butter until mixture is smooth. Transfer to bowl of mixer.

Add vanilla to mixture. Slowly add cocoa powder and powdered sugar and beat until thoroughly mixed. Stir in nuts. Spread mixture evenly in a 9×13 inch buttered pan.

Refrigerate for 1 hour before serving.
