Recipe Ingredients:

  • 8 oz. bowtie pasta, cooked and drained

  • 1 1/2 cups cooked* large lima beans or 1 can (15 oz.) butter beans, drained

  • 1 can (2.25 oz.) sliced black olives, drained

  • 1/2 cup diced red or green bell pepper

  • 1/3 cup thinly sliced red onion

  • Dijon Vinaigrette (recipe follows) or 1/3 cup bottled Dijon vinaigrette

  • 1/3 cup grated Parmesan cheese

  • 2 tablespoons minced parsley

  • Fresh ground pepper to taste

Dijon Vinaigrette:

  • 1/4 cup balsamic or red wine vinegar

  • 2 tablespoons olive oil

  • 2 teaspoons sugar

  • 1 teaspoon Dijon style mustard

  • 1/4 teaspoon salt

  • 1-2 cloves garlic, minced or pressed

Instructions

In a large bowl, combine pasta, lima beans, olives, bell pepper and onion. Pour vinaigrette over salad and stir gently until ingredients are well coated. Stir in Parmesan, parsley and pepper. Chill until serving.

Dijon Vinaigrette:

In a small bowl or shaker jar, combine all ingredients and mix well. Makes about 1/3 cup. Makes 7 cups. Serves approximately 6.
