Recipe Ingredients:

  • 1⁄2 cup chopped onion

  • 1 small clove garlic, minced

  • 2 tablespoons butter or margarine

  • 1 tablespoon flour

  • 3 cups cooked*, drained large lima beans or two 16-oz. cans, drained

  • 1⁄2 pound boneless ham cut into 1-inch cubes

  • 3⁄4 cup thinly sliced carrots

  • 2 tablespoons dry white wine

  • 1⁄4 teaspoon each dry mustard and thyme, crushed

  • Dash ground allspice

  • Salt

  • Buttered Bread Crumbs

Instructions

Sauté onion and garlic in butter until onion is tender; blend in flour. Combine with beans, ham, carrots, 1 cup water, wine, mustard, thyme and allspice; salt to taste. Place in greased 5-cup baking dish. Bake at 350ºF. 1 hour or until most of liquid is absorbed. Add Buttered Bread Crumbs during last 15 minutes. Let stand 10 to 15 minutes before serving. Makes 4 servings.

BUTTERED BREAD CRUMBS:

Sauté 1 cup bread crumbs in 1 tablespoon butter until crumbs are crisp and golden brown. Makes about 3⁄4 cup.

*For best results, soak and cook dry beans by preferred method.
